Fresh Lumpia
Fresh spring rolls stuffed with savory pork and sauteed vegetables, wrapped in delicate crepes and served with a garlic peanut sauce.
Ingredients
- 1/2 lb pork loin, sliced thin
- 4 garlic cloves, minced
- 1 yellow onion, diced
- 1 cup sweet potato, julienned
- 1 cup carrot, julienned
- 2 cups green cabbage, shredded
- 2 tbsp soy sauce
- 1 cup water
- 2 large eggs, beaten
- 1/2 cup all-purpose flour
- 1 cup water
- 1/4 cup brown sugar
- 2 tbsp creamy peanut butter
- 2 tbsp cornstarch
- 8 leaves green leaf lettuce, washed

Heat oil in a skillet over medium heat, then saute 4 minced garlic cloves and 1 diced yellow onion for 2 minutes.

Add 1/2 lb sliced thin pork loin and cook for 5 minutes until browned and internal temperature reaches 145°F.

Stir in 1 cup julienned sweet potato, 1 cup julienned carrot, 2 cups shredded green cabbage, and 2 tbsp soy sauce, cooking 5 minutes until tender, then cool.

Whisk 2 beaten large eggs, 1/2 cup all-purpose flour, and 1 cup water into a thin batter, then cook portioned thin crepes in a skillet.

Simmer 1 cup water, 1/4 cup brown sugar, 2 tbsp creamy peanut butter, and 2 tbsp cornstarch in a small saucepan until thickened into sauce.

Assemble each crepe with a 8 leaves washed green leaf lettuce leaf, vegetable-pork filling, roll tightly, and drizzle with warm peanut sauce.
