Nilagang Baka
A comforting Filipino beef soup featuring tender beef shank simmered with potatoes, cabbage, and whole peppercorns in a flavorful broth.
Ingredients
- 2 lbs beef shank, cubed
- 8 cups water
- 1 yellow onion, quartered
- 1 tsp whole black peppercorns, crushed
- 2 tbsp fish sauce
- 4 Yukon Gold potatoes, halved
- 1/2 head green cabbage, wedged
- 4 stalks green onions, chopped

In a large stockpot, combine 2 lbs cubed beef shank, 1 quartered yellow onion, 1 tsp crushed whole black peppercorns, and 8 cups water.

Bring to a boil over high heat, skimming off any foam that rises to the surface.

Lower heat to medium-low, cover, and simmer for 60 to 75 minutes until beef is tender and reaches an internal temperature of at least 160°F.

Add 4 halved Yukon Gold potatoes and 2 tbsp fish sauce, then cook uncovered for 10 minutes until potatoes are soft.

Stir in 1/2 head wedged green cabbage and simmer for 3 minutes until tender-crisp.

Ladle soup into bowls and garnish with 4 stalks chopped green onions before serving hot.
