Greek Yogurt Berry Protein Bark
Sweetened Greek yogurt spread into a thin sheet, loaded with fresh berries and granola, then frozen into crisp, snappable bark for a cool high-protein treat. Plan ahead: freeze at least 3 hours before breaking.
Ingredients
- 4 cups plain full-fat Greek yogurt
- 1/4 cup honey
- 1 tsp vanilla extract
- 1 cup fresh strawberries, hulled, sliced
- 1/2 cup fresh blueberries
- 1/2 cup gluten-free granola
- 1 tsp lemon zest

In a bowl, stir together 4 cups plain full-fat Greek yogurt, 1/4 cup honey, 1 tsp vanilla extract, and 1 tsp lemon zest until smooth.

Line a large baking sheet with parchment paper. Spread the yogurt mixture into an even layer about 1/4 inch thick.

Scatter 1 cup hulled, sliced fresh strawberries and 1/2 cup fresh blueberries over the yogurt. Sprinkle 1/2 cup gluten-free granola evenly on top, pressing very lightly so it adheres.

Freeze until completely solid, at least 3 hours or overnight.

Break the bark into rough pieces and serve immediately. Store leftover pieces in the freezer in an airtight container.
