Hamburg Steak with Demi Sauce

Ingredients

  • 1 lb ground beef (80/20)
  • 1/2 lb ground pork
  • 1 medium yellow onion, finely diced
  • 2 tbsp unsalted butter
  • 1/4 cup panko breadcrumbs
  • 1/4 cup whole milk
  • 1 large egg, beaten
  • 1/4 tsp ground nutmeg
  • 1 tsp kosher salt
  • 1/2 tsp black pepper, freshly ground
  • 2 tbsp vegetable oil
  • 8 oz cremini mushrooms, thinly sliced
  • 1 cup beef broth
  • 1/4 cup dry red wine
  • 2 tbsp tomato paste
  • 2 tsp Worcestershire sauce
  • 2 tsp soy sauce
  • 2 tsp unsalted butter

Instructions

    Melt 2 tbsp unsalted butter in a skillet over medium heat. Add 1 medium finely diced yellow onion and cook until soft and golden, about 8 minutes. Transfer to a plate and cool.

    In a large bowl, combine 1/4 cup panko breadcrumbs and 1/4 cup whole milk; let sit 2 minutes. Add 1 lb ground beef (80/20), 1/2 lb ground pork, cooled onion, 1 beaten large egg, 1/4 tsp ground nutmeg, 1 tsp kosher salt, and 1/2 tsp freshly ground black pepper. Mix gently until just combined. Shape into 4 oval patties with a dimple pressed into the center of each.

    Heat 2 tbsp vegetable oil in the skillet over medium-high heat. Cook patties dimple-side up until browned on the bottom, 3 to 4 minutes. Flip and cook 3 to 4 more minutes. Cover, reduce heat to medium-low, and cook until internal temperature reaches 165 degrees F (74 degrees C), about 3 additional minutes. Remove and tent with foil.

    In the same skillet over medium-high heat, cook 8 oz thinly sliced cremini mushrooms until browned and liquid evaporates, about 4 minutes.

    Add 1/4 cup dry red wine and scrape up browned bits. Stir in 1 cup beef broth, 2 tbsp tomato paste, 2 tsp Worcestershire sauce, and 2 tsp soy sauce. Boil until sauce reduces by a third and lightly coats a spoon, about 5 minutes.

    Remove from heat and swirl in 2 tsp unsalted butter. Return patties to pan and spoon sauce over them. Serve immediately.
