Boiled Daikon Radish
Tender rounds of daikon radish simmered in a savory broth with soy sauce and mirin. A comforting and traditional side dish.
Ingredients
- 2 lbs daikon radish, thickly sliced
- 2 tbsp uncooked white rice
- 3 cups dashi stock
- 2 tbsp soy sauce
- 2 tbsp mirin
- 1 tsp sugar

Place 2 lbs thickly sliced daikon radish and 2 tbsp uncooked white rice in a pot and cover with cold water.

Boil for 20 minutes until partially tender, then drain and rinse daikon radish.

In a clean pot, combine 3 cups dashi stock, 2 tbsp soy sauce, 2 tbsp mirin, and 1 tsp sugar.

Add rinsed daikon radish and simmer for 20 minutes until completely tender.
