Herbed Butter Beans with Smoked Ham
This comforting dish features tender butter beans simmered with savory smoked ham, aromatic herbs, and a touch of butter. It's a hearty and flavorful side or light main meal.
Ingredients
- 2 cans canned butter beans, drained, rinsed
- 8 oz fully cooked smoked ham, diced
- 1 small yellow onion, diced
- 2 garlic cloves, minced
- 2 cups chicken broth
- 1 tsp fresh thyme, chopped
- 1/2 tsp fresh rosemary, chopped
- 1 bay leaf
- 2 tbsp unsalted butter
- 1/2 tsp kosher salt
- 1/4 tsp black pepper, freshly ground
- 2 tbsp fresh parsley, chopped

In a large pot or Dutch oven, melt 2 tbsp unsalted butter over medium heat. Add 1 small diced yellow onion and cook for 3-5 minutes until softened.

Add 2 minced garlic cloves and 8 oz diced fully cooked smoked ham. Cook for another 2-3 minutes, stirring occasionally, until the garlic is fragrant and ham is heated through.

Stir in 2 cans drained, rinsed canned butter beans, 2 cups chicken broth, 1 tsp chopped fresh thyme, 1/2 tsp chopped fresh rosemary, and 1 bay leaf. Bring to a simmer.

Reduce heat to low, cover, and cook for 15-20 minutes, stirring occasionally, until the butter beans are very tender and the flavors have melded. Remove the bay leaf.

Season with 1/2 tsp kosher salt and 1/4 tsp freshly ground black pepper to taste. Garnish with 2 tbsp chopped fresh parsley before serving.
