Hot Honey Beef Bowl
The 2026 high-protein viral bowl: taco-spiced ground beef with roasted sweet potato, cottage cheese, avocado, and a hot honey drizzle for sweet-spicy heat.
Ingredients
- 2 sweet potato, diced
- 2 tbsp olive oil
- 1 1/2 lbs lean ground beef (93/7)
- 2 tbsp taco seasoning
- 2 cloves garlic, minced
- 1/2 tsp salt
- 3 cups cooked white rice
- 1 cup cottage cheese
- 2 avocado, sliced
- 1 cup corn kernels
- 1/4 cup hot honey
- 2 lime, cut into wedges
- 1/4 cup fresh cilantro, chopped

Preheat the oven to 425F. Toss 2 diced sweet potato with half the 2 tbsp olive oil and a pinch of 1/2 tsp salt on a sheet pan and roast for 20 to 25 minutes, stirring once, until tender and caramelized at the edges.

Meanwhile, heat the remaining olive oil in a large skillet over medium-high heat. Add 1 1/2 lbs lean ground beef (93/7) and cook, breaking it up with a spoon, for 6 to 8 minutes until browned and no longer pink, reaching an internal temperature of 160F.

Stir in 2 tbsp taco seasoning, 2 cloves minced garlic, and the remaining salt. Cook for 1 more minute until fragrant, then remove from the heat.

Divide 3 cups cooked white rice among bowls as the base.

Top each bowl with the taco-spiced beef, roasted sweet potato, 1 cup cottage cheese, 2 sliced avocado, and 1 cup corn kernels.

Drizzle generously with 1/4 cup hot honey, squeeze a wedge of 2 cut into wedges lime over each bowl, and finish with 1/4 cup chopped fresh cilantro.
