Jalapeño Poppers

Ingredients

  • 12 jalapeño peppers, halved lengthwise, seeds and membranes removed
  • 8 oz cream cheese, softened
  • 1 cup cheddar cheese, shredded
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 cup panko breadcrumbs
  • 1/4 cup Parmesan cheese, grated
  • 2 eggs, beaten
  • as needed cooking spray

Instructions

    Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or aluminum foil.

    In a medium bowl, mix 8 oz softened cream cheese, 1 cup shredded cheddar cheese, 1/2 tsp garlic powder, and 1/2 tsp onion powder until well combined.

    In a separate bowl, combine 1 cup panko breadcrumbs and 1/4 cup grated Parmesan cheese.

    Fill each of the 12 halved lengthwise, seeds and membranes removed jalapeño peppers with the cheese mixture.

    Dip each stuffed jalapeño in 2 beaten eggs, then coat with the breadcrumb mixture.

    Place jalapeños on the prepared baking sheet and spray lightly with as needed cooking spray.

    Bake for 20-25 minutes until golden brown and crispy. Let cool for 5 minutes before serving.
