Cafe Cubano
A traditional Cuban espresso brewed with a rich, thick sugar foam known as espumita. It delivers a sweet, intense flavor profile with a velvety texture.
Ingredients
- 1 cup water
- 4 tbsp espresso coffee grounds
- 1/4 cup granulated white sugar

Fill the lower chamber of a moka pot with 1 cup water up to the safety valve.

Insert the filter basket and add 4 tbsp espresso coffee grounds without tamping heavily.

Place 1/4 cup granulated white sugar into a small cup or glass pitcher.

Screw on top of moka pot tightly and place on stovetop over medium heat.

Pour the first few drops of brewed coffee into the cup with granulated white sugar.

Vigorously beat the coffee drops into granulated white sugar with a spoon for two minutes until a pale foam paste forms.

Pour the remaining brewed coffee slowly into the cup, stirring gently so the creamy foam rises to the top.
