Hungarian Mushroom Soup
A creamy, deeply flavorful soup loaded with mushrooms and seasoned with Hungarian paprika. Comfort in a bowl with a touch of elegance.
Ingredients
- 1.5 lbs mixed mushrooms (cremini, button, portobello), sliced
- 1 medium yellow onion, diced
- 2 garlic cloves, minced
- 1 tsp Hungarian sweet paprika
- 6 cups vegetable stock
- 1/2 cup heavy cream
- 1/4 cup sour cream
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp fresh parsley, chopped, chopped
- 1 tsp fresh dill, chopped, chopped

Heat 1 tbsp olive oil in a large pot over medium-high heat. Add 1 medium diced yellow onion and sauté until softened, about 5 minutes.

Stir in 2 minced garlic cloves and cook 1 minute until fragrant.

Add 1.5 lbs sliced mixed mushrooms (cremini, button, portobello) and cook, stirring occasionally, until they release their liquid and begin to brown, about 8-10 minutes.

Sprinkle 1 tsp Hungarian sweet paprika over the mushrooms and stir well for 1 minute to toast the spice.

Pour in 6 cups vegetable stock and bring to a simmer. Cook uncovered for 15-20 minutes until flavors meld.

In a small bowl, whisk together 1/2 cup heavy cream and 1/4 cup sour cream. Stir slowly into the hot soup, being careful not to boil.

Season with 1/2 tsp salt and 1/4 tsp black pepper to taste.

Ladle into bowls and garnish with 1 tsp chopped fresh parsley, chopped and 1 tsp chopped fresh dill, chopped. Serve hot.
