Keto Peanut Butter Mug Cake
A single-serving flourless peanut butter cake made in a mug on the stovetop or microwave, sweetened with erythritol for an indulgent keto dessert ready in minutes.
Ingredients
- 3 tbsp natural peanut butter (no added sugar)
- 1 large egg, beaten
- 2 tbsp granulated erythritol (or monk fruit sweetener)
- 1/4 tsp baking powder
- 1/4 tsp vanilla extract
- pinch salt
- 1 tsp unsalted butter

Grease a small oven-safe ramekin or microwave-safe mug with 1 tsp unsalted butter.

In a small bowl, stir together 3 tbsp natural peanut butter (no added sugar), 1 beaten large egg, 2 tbsp granulated erythritol (or monk fruit sweetener), 1/4 tsp baking powder, 1/4 tsp vanilla extract, and pinch salt until smooth.

Pour the batter into the prepared mug.

Stovetop method: place the mug in a small saucepan with 1 inch of water, cover with a lid, and steam over medium heat for 4-5 minutes until the top is just set. Alternatively, microwave on high for 60-90 seconds, checking at 60 seconds.

Let cool for 1 minute before eating. The cake will be moist and fudgy. Serve warm directly in the mug.
