Ingredients

  • 3 tbsp natural peanut butter (no added sugar)
  • 1 large egg, beaten
  • 2 tbsp granulated erythritol (or monk fruit sweetener)
  • 1/4 tsp baking powder
  • 1/4 tsp vanilla extract
  • pinch salt
  • 1 tsp unsalted butter

    Grease a small oven-safe ramekin or microwave-safe mug with 1 tsp unsalted butter.

    In a small bowl, stir together 3 tbsp natural peanut butter (no added sugar), 1 beaten large egg, 2 tbsp granulated erythritol (or monk fruit sweetener), 1/4 tsp baking powder, 1/4 tsp vanilla extract, and pinch salt until smooth.

    Pour the batter into the prepared mug.

    Stovetop method: place the mug in a small saucepan with 1 inch of water, cover with a lid, and steam over medium heat for 4-5 minutes until the top is just set. Alternatively, microwave on high for 60-90 seconds, checking at 60 seconds.
