Kozlenmis Biber Salatasi
A Turkish roasted red pepper salad tossed with garlic, olive oil, pomegranate molasses, and fresh parsley. Serves as a smoky and tangy meze component.
Ingredients
- 4 red bell peppers, halved
- 3 tbsp extra virgin olive oil
- 2 garlic cloves, minced
- 2 tbsp fresh lemon juice
- 1 tbsp pomegranate molasses
- 1/4 cup fresh flat-leaf parsley, chopped
- 1/2 tsp fine sea salt

Preheat the oven broiler to high and line a baking sheet with foil.

Place 4 halved red bell peppers cut-side down on the baking sheet and broil for 10 to 12 minutes until skins are charred.

Transfer red bell peppers to a bowl, cover tightly, and steam for 10 minutes.

Peel skins, remove seeds, and slice red bell peppers into thin strips.

Whisk together 3 tbsp extra virgin olive oil, 2 minced garlic cloves, 2 tbsp fresh lemon juice, 1 tbsp pomegranate molasses, and 1/2 tsp fine sea salt in a medium bowl.

Toss sliced red bell peppers and 1/4 cup chopped fresh flat-leaf parsley with the dressing until well coated.
