Yayla Çorbası
A comforting Turkish yogurt soup cooked with tender rice and finished with a sizzling dried mint and butter drizzle.
Ingredients
- 4 cups water
- 1/3 cup white rice, rinsed
- 1 cup plain yogurt
- 1 egg yolk
- 1 tbsp all-purpose flour
- 2 tbsp unsalted butter
- 1 tbsp dried mint
- 1/2 tsp red pepper flakes
- 1 tsp salt

In a pot, combine 4 cups water and 1/3 cup rinsed white rice, bring to a boil, then reduce heat and simmer for 15 minutes until tender.

In a bowl, whisk together 1 cup plain yogurt, 1 egg yolk, and 1 tbsp all-purpose flour until smooth.

Slowly whisk 1 cup of hot broth from the pot into the yogurt mixture to temper it, then pour it back into the pot while stirring constantly.

Simmer gently over low heat for 5 minutes without boiling, stirring frequently.

In a small skillet, melt 2 tbsp unsalted butter over medium heat, stir in 1 tbsp dried mint and 1/2 tsp red pepper flakes, and sizzle for 30 seconds.

Stir 1 tsp salt into the soup, ladle into bowls, and drizzle with the mint butter.
