Kuru Fasulye
A classic Turkish stew made with tender white beans, beef, and aromatic red pepper paste in a rich tomato sauce.
Ingredients
- 2 cups navy beans, soaked
- 1 lb stew beef, diced
- 2 tbsp olive oil
- 1 yellow onion, diced
- 2 garlic cloves, minced
- 2 tbsp tomato paste
- 1 tbsp Turkish red pepper paste
- 4 cups beef broth
- 1/2 tsp red pepper flakes
- 1 tsp salt
- 1/2 tsp black pepper

Heat 2 tbsp olive oil in a large pot over medium-high heat.

Add 1 lb diced stew beef and sear for 5 minutes until browned and reaching an internal temperature of at least 145°F.

Add 1 diced yellow onion and 2 minced garlic cloves, sautéing for 4 minutes until softened.

Stir in 2 tbsp tomato paste and 1 tbsp Turkish red pepper paste, cooking for 1 minute until fragrant.

Add 2 cups soaked navy beans, 4 cups beef broth, 1/2 tsp red pepper flakes, 1 tsp salt, and 1/2 tsp black pepper.

Bring to a boil, then reduce heat to low, cover, and simmer for 45 minutes until the beans are tender.
