Lamb Apricot Stew
Tender braised lamb shoulder with dried apricots, cinnamon, and warm spices. A sweet-savory Turkish specialty that's rich, complex, and perfect for cooler days.
Ingredients
- 2 lb Lamb shoulder, cut into 1-inch cubes
- 1/2 cup Dried apricots
- 1 medium Onion, chopped
- 2 cloves Garlic, minced
- 2 cups Beef broth
- 2 tbsp Tomato paste
- 1/4 tsp Cinnamon
- 1/4 tsp Cumin
- 2 tbsp Olive oil
- 1/4 tsp Salt
- 1/8 tsp Black pepper

Heat 2 tbsp Olive oil in a large pot over medium-high heat. Add 2 lb cut into 1-inch cubes Lamb shoulder and brown on all sides, about 8 minutes total. Remove and set aside.

Add 1 medium chopped Onion to the pot and cook until softened, about 3 minutes. Add 2 cloves minced Garlic and cook for 1 minute more.

Stir in 2 tbsp Tomato paste and cook for 1 minute. Add 2 cups Beef broth, 1/4 tsp Cinnamon, and 1/4 tsp Cumin.

Return the lamb to the pot. Bring to a simmer, cover, and reduce heat to medium-low. Cook for 1 hour.

Add 1/2 cup Dried apricots, season with 1/4 tsp Salt and 1/8 tsp Black pepper. Simmer uncovered for 15 more minutes until lamb is very tender.

Serve hot, skimming any surface fat if desired.
