Lokma
Crispy on the outside and soaked in sweet lemon syrup on the inside, these golden fried dough balls are a classic treat.
Ingredients
- 2 cups granulated sugar
- 1.5 cups water
- 2 tsp lemon juice
- 1 tsp granulated sugar
- 2 tsp active dry yeast
- 1.5 cups warm water
- 2 cups all-purpose flour
- 2 tbsp cornstarch
- 1/2 tsp fine salt
- 4 cups vegetable oil

Combine 2 cups granulated sugar, 1.5 cups water, and 2 tsp lemon juice in a saucepan over medium heat.

Bring to a boil, simmer for 10 minutes until slightly thickened, then remove from heat to cool completely.

In a bowl, dissolve 1 tsp granulated sugar and 2 tsp active dry yeast in 1.5 cups warm water and let sit for 5 minutes until foamy.

Whisk in 2 cups all-purpose flour, 2 tbsp cornstarch, and 1/2 tsp fine salt to create a smooth, sticky batter.

Cover the dough and let it rise in a warm spot for 1 hour until doubled and bubbly.

Heat 4 cups vegetable oil in a deep pot to 350 degrees F.

Drop small spoonfuls of dough into hot oil and fry for 3 to 4 minutes until golden brown and crispy.
