Ingredients

  • 1 lb silken tofu, gently cubed
  • 2 tbsp chili oil
  • 2 tbsp white or red miso paste
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 2 tbsp vegetable oil
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 1/2 tsp Sichuan peppercorns, toasted
  • 1/2 cup vegetable broth
  • 2 green onions, sliced
  • 2 tbsp fresh cilantro, chopped

Instructions

    Heat 2 tbsp vegetable oil in a wok or large skillet over medium-high heat. Add 4 cloves minced garlic and 1 tbsp minced fresh ginger, cook for 1 minute until fragrant.

    Add 2 tbsp white or red miso paste and stir to dissolve, cooking for 1 minute.

    Add 1/2 cup vegetable broth, 2 tbsp soy sauce, 1 tbsp rice vinegar, and 1/2 tsp toasted Sichuan peppercorns. Bring to a simmer.

    Gently add 1 lb gently cubed silken tofu and simmer for 3-4 minutes, stirring very gently to avoid breaking the tofu. Do not boil.

    Drizzle with 2 tbsp chili oil and 1 tsp sesame oil. Top with 2 sliced green onions and 2 tbsp chopped fresh cilantro.
