Moroccan Red Lentil Soup
Silky red lentil soup infused with warm spices like cumin and cinnamon, enriched with tomatoes and sweet potato. Cozy, hearty, and deeply satisfying.
Ingredients
- 1 cup red lentils, rinsed
- 1 medium sweet potato, diced
- 1 medium yellow onion, diced
- 2 garlic cloves, minced
- 6 cups vegetable broth
- 1 can canned diced tomatoes (14 oz can)
- 1/2 tsp ground cumin
- 1/4 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1/4 tsp turmeric
- 1/4 tsp paprika
- 2 tbsp olive oil
- 1/4 tsp salt
- 2 tbsp fresh cilantro, chopped
- 2 tbsp fresh lemon juice

Heat 2 tbsp olive oil in a large pot over medium heat. Add 1 medium diced yellow onion and 2 minced garlic cloves, cooking until softened, about 3 minutes.

Stir in 1/2 tsp ground cumin, 1/4 tsp ground cinnamon, 1/4 tsp ground ginger, 1/4 tsp turmeric, and 1/4 tsp paprika. Cook for 1 minute until fragrant.

Add 1 cup rinsed red lentils, 1 medium diced sweet potato, 6 cups vegetable broth, and 1 can canned diced tomatoes (14 oz can). Bring to a boil.

Reduce heat to low and simmer, uncovered, for 25-30 minutes until lentils are completely soft and sweet potato is tender.

Season with 1/4 tsp salt and 2 tbsp fresh lemon juice. For a creamier soup, use an immersion blender to partially blend.

Ladle into bowls and garnish with 2 tbsp chopped fresh cilantro. Serve hot.
