Instructions

    Heat 3 tbsp olive oil in a large skillet over medium-high heat. Add 1 large diced eggplant and cook for 8-10 minutes, stirring occasionally, until softened and beginning to brown.

    Add 4 medium diced tomatoes and 2 minced garlic cloves to the skillet. Cook for 3-4 minutes, stirring gently.

    Stir in 1/2 tsp ground cumin, 1/2 tsp paprika, and 1/4 tsp ground coriander. Cook for 1 minute until fragrant.

    Using the back of a wooden spoon, gently mash the eggplant and tomatoes together until they reach a chunky, broken-down consistency.
