Nasi Kuning Goreng
Golden turmeric fried rice with aromatic spices and crispy edges. A fragrant, one-pot meal that's trending for its simplicity and stunning color.
Ingredients
- 4 cups cooked jasmine rice, chilled
- 1 tsp ground turmeric
- 1/2 tsp ground cumin
- 6 garlic cloves, minced
- 4 shallots, minced
- 2 tsp fresh ginger, minced
- 3 tbsp coconut oil
- 2 tbsp soy sauce
- 1/2 cup chicken broth
- 1 lemongrass stalk, finely chopped
- 2 large eggs, beaten
- 1 cup frozen peas and corn
- 4 scallions, sliced
- 1/4 tsp sea salt

Heat 3 tbsp coconut oil in a large wok or skillet over high heat until shimmering.

Add 6 minced garlic cloves, 4 minced shallots, and 2 tsp minced fresh ginger. Stir-fry for 30 seconds until fragrant.

Sprinkle in 1 tsp ground turmeric and 1/2 tsp ground cumin. Stir to coat the aromatics, about 30 seconds.

Push the aromatics to the side. Pour the 2 beaten large eggs into the center and scramble lightly. Once partially cooked, break into pieces and mix with the aromatics.

Add 4 cups cooked jasmine rice, chilled, breaking up any clumps. Stir-fry continuously for 3-4 minutes to coat the rice evenly with the turmeric and spices.

Pour in 2 tbsp soy sauce and 1/2 cup chicken broth. Add 1 finely chopped lemongrass stalk and 1 cup frozen peas and corn. Toss everything together and cook for 2-3 minutes more.

Season with 1/4 tsp sea salt to taste. Remove from heat and garnish with 4 sliced scallions. Serve immediately.
