Nasi Uduk
Fragrant Indonesian rice cooked in coconut milk infused with lemongrass, pandan, and bay leaves. It offers a rich texture and deeply aromatic savory flavor.

- 2 cups jasmine rice, rinsed
- 1.5 cups coconut milk
- 1.5 cups water
- 2 lemongrass stalks, bruised
- 2 pandan leaves, knotted
- 2 Indonesian bay leaves
- 1 inch fresh galangal, sliced
- 1 tsp fine salt

Combine 2 cups rinsed jasmine rice, 1.5 cups coconut milk, 1.5 cups water, 2 bruised lemongrass stalks, 2 knotted pandan leaves, 2 Indonesian bay leaves, 1 inch sliced fresh galangal, and 1 tsp fine salt in a heavy pot over medium heat.

Bring the mixture to a simmer while stirring constantly to prevent sticking.

Reduce heat to low, cover the pot tightly, and cook for 15 minutes until liquid is fully absorbed.
