Panada
A popular Manado fried bread pastry filled with a savory, spicy tuna and aromatic spices.
Ingredients
- 3 cups all-purpose flour
- 2 tsp instant yeast
- 2 tbsp granulated sugar
- 1 tsp salt
- 1 egg, beaten
- 2/3 cup warm coconut milk
- 2 cups vegetable oil
- 4 shallots, minced
- 2 garlic cloves, minced
- 2 red chili pepper, minced
- 2 cans canned tuna in water, drained
- 2 tsp lime juice

Combine 3 cups all-purpose flour, 2 tsp instant yeast, 2 tbsp granulated sugar, and 1 tsp salt in a mixing bowl.

Mix in 1 beaten egg and 2/3 cup warm coconut milk, then knead into a smooth dough and let rest for 30 minutes.

Heat a small amount of 2 cups vegetable oil in a skillet over medium heat, then saute 4 minced shallots, 2 minced garlic cloves, and 2 minced red chili pepper until fragrant.

Add 2 cans drained canned tuna in water and 2 tsp lime juice, stirring until heated through to an internal temperature of 165°F.

Divide dough, roll into circles, place filling inside, seal edges tightly, and fry in remaining 2 cups vegetable oil until golden brown.
