Ingredients

  • 1/2 tsp salt
  • 1/2 cup palm sugar, chopped
  • 1/4 cup roasted peanuts
  • 2 tbsp tamarind paste
  • 2 tbsp warm water
  • 1 cup jicama, sliced
  • 1 cup cucumber, sliced
  • 1 cup unripe green mango, sliced
  • 1 cup fresh pineapple, cubed

Instructions

    Grind 2 sliced bird's eye chilies and 1/2 tsp salt together in a mortar until smooth.

    Add 1/2 cup chopped palm sugar and 1/4 cup roasted peanuts, grinding until a coarse paste forms.

    Stir in 2 tbsp tamarind paste and 2 tbsp warm water to loosen the dressing.
