Paleo Chocolate Coconut Date Bars

No-bake energy bars made from blended Medjool dates, toasted coconut flakes, and cacao powder, pressed into a pan and chilled until firm. Naturally sweet and grain-free with no added sugar.

Ingredients

  • 2 cups Medjool dates, pitted
  • 1 1/2 cups unsweetened shredded coconut
  • 1 cup raw almonds
  • 1/4 cup raw cacao powder (or unsweetened cocoa powder)
  • 2 tbsp coconut oil, melted
  • 1 tsp pure vanilla extract
  • 1/4 tsp fine sea salt

    Line an 8x8-inch baking pan with parchment paper, leaving overhang on two sides for easy removal.

    Add 1 cup raw almonds to a food processor and pulse 8 to 10 times until coarsely chopped. Transfer to a bowl.

    Add 2 cups pitted Medjool dates to the food processor and blend until a sticky paste forms, about 30 seconds.

    Add the chopped almonds back to the processor along with 1 1/2 cups unsweetened shredded coconut, 1/4 cup raw cacao powder (or unsweetened cocoa powder), 2 tbsp melted coconut oil, 1 tsp pure vanilla extract, and 1/4 tsp fine sea salt. Pulse until the mixture comes together and holds when pressed between your fingers.

    Transfer the mixture to the prepared pan. Using damp hands or the back of a spoon, press firmly and evenly into the pan.

    Refrigerate for at least 1 hour until firm, then lift out using the parchment and cut into 12 bars.

    Store bars in an airtight container in the refrigerator for up to 2 weeks.
