Paleo Cobb Lettuce Wrap with Chicken
All the classic Cobb salad flavors — chicken, bacon, hard-boiled egg, avocado, and tomato — wrapped in crisp butter lettuce leaves instead of a tortilla.
Ingredients
- 8 leaves butter lettuce, leaves separated
- 8 oz cooked chicken breast, sliced or shredded
- 4 strips cooked bacon, crumbled
- 2 hard-boiled eggs, sliced
- 1 ripe avocado, sliced
- 1/2 cup cherry tomatoes, halved
- 2 tsp fresh lemon juice
- 2 tsp extra-virgin olive oil
- 1/2 tsp kosher salt
- 1/4 tsp black pepper, freshly ground

Arrange 8 leaves leaves separated butter lettuce on a flat surface or serving platter.

Divide 8 oz sliced or shredded cooked chicken breast evenly among the lettuce leaves.

Top with 2 sliced hard-boiled eggs, 1 sliced ripe avocado, 1/2 cup halved cherry tomatoes, and 4 strips crumbled cooked bacon.

Whisk together 2 tsp fresh lemon juice and 2 tsp extra-virgin olive oil in a small bowl. Season with 1/2 tsp kosher salt and 1/4 tsp freshly ground black pepper.
