  • 2 tbsp olive oil
  • 2 tbsp sofrito
  • 1/2 onion, minced
  • 2 garlic cloves, minced
  • 3.5 cups chicken broth
  • 1/4 tsp turmeric
  • 1/2 tsp salt
  • to taste black pepper
  • 1/2 cup frozen peas (optional)

Instructions

    Heat 2 tbsp olive oil in a pot over medium heat.

    Add 2 tbsp sofrito, 1/2 minced onion, and 2 minced garlic cloves. Sauté 1 minute.

    Add 2 cups long-grain white rice and stir to coat, about 1 minute.

    Pour in 3.5 cups chicken broth. Add 1/4 tsp turmeric, 1/2 tsp salt, black pepper.

    Reduce heat to low, cover with tight lid, simmer 15-20 min until rice is tender.
