Alcapurrias de Yuca
Crispy golden cassava fritters stuffed with a savory Puerto Rican ground beef picadillo filling.
Ingredients
- 2 lbs fresh cassava, grated
- 2 tbsp annatto oil
- 1 tsp fine salt
- 1 lb lean ground beef
- 1/4 cup sofrito
- 1/4 cup tomato sauce
- 2 tbsp stuffed olives, minced
- 2 cups vegetable oil

Heat a skillet over medium heat, then add 1 lb lean ground beef and 1/4 cup sofrito, cooking until beef is browned and reaches an internal temperature of 160°F.

Stir 1/4 cup tomato sauce and 2 tbsp minced stuffed olives into the skillet, then simmer for 5 minutes until thickened and let cool.

Combine 2 lbs grated fresh cassava, 2 tbsp annatto oil, and 1 tsp fine salt in a bowl to form a smooth dough masa.

Spread a portion of masa on parchment paper, place meat filling in the center, and fold masa over to seal into a cylinder.

Heat 2 cups vegetable oil to 350°F in a deep pan and fry fritters for 5 to 7 minutes until crisp and golden brown.
