Carne Guisada
Puerto Rican stewed beef with potatoes, tomatoes, and olives in a rich gravy, a comfort food classic with fork-tender meat and savory sauce perfect over rice.
Ingredients
- 4 lbs beef stewing meat, cubed
- 2 tbsp olive oil
- 1 onion, diced
- 4 garlic cloves, minced
- 1 bell pepper, diced
- 4 tbsp sofrito
- 1 28oz can diced tomatoes (canned)
- 1 cup tomato sauce
- 2 cups beef broth
- 2 lbs potatoes, cubed
- 1/2 cup green olives (pitted)
- 1 tsp oregano
- 1/2 tsp cumin
- 1 tsp salt
- to taste black pepper

Heat 2 tbsp olive oil over medium-high. Brown 4 lbs cubed beef stewing meat in batches, 5-7 min. Set aside.

Sauté 1 diced onion, 4 minced garlic cloves, 1 diced bell pepper until soft.

Stir in 4 tbsp sofrito, 1 tsp oregano, 1/2 tsp cumin. Cook 1 min.

Add 1 28oz can diced tomatoes (canned) and 1 cup tomato sauce.

Return beef. Pour in 2 cups beef broth.

Bring to boil, reduce heat, cover and simmer 45 min.

Add 2 lbs cubed potatoes, simmer 20-30 min until tender.

Beef should reach 190 degrees F (fork-tender).

Stir in 1/2 cup green olives (pitted). Simmer 5 more min.

Season with 1 tsp salt and black pepper.
