Roasted Grouper Fish
A simple yet elegant baked grouper with lemon, herbs, and tropical seasonings that shines on any dinner table.
Ingredients
- 2 lbs grouper fillets (6 oz each)
- 2 tbsp lime juice
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1 tbsp fresh thyme, chopped
- 1 tbsp fresh cilantro, chopped
- 1/2 cup red onion, thinly sliced
- 1 tomato, sliced
- 1/2 lemon, thinly sliced
- 1/4 tsp salt
- 1/4 tsp black pepper

Preheat oven to 400°F. Line a baking sheet with parchment paper.

Pat 2 lbs grouper fillets (6 oz each) dry and place on the prepared sheet.

Drizzle with 2 tbsp lime juice and 2 tbsp olive oil.

Season with 1/4 tsp salt and 1/4 tsp black pepper.

Top each fillet with 2 minced garlic cloves, 1 tbsp chopped fresh thyme, and 1 tbsp chopped fresh cilantro.

Arrange 1/2 cup thinly sliced red onion, 1 sliced tomato, and 1/2 thinly sliced lemon around and on top of the fish.

Bake for 15-20 minutes until the fish flakes easily with a fork and internal temperature reaches 145°F.

Serve immediately with pan juices drizzled over.
