Sobrasada Toast
Crispy toast topped with creamy Balearic sobrasada and slow-roasted confit tomatoes. A trendy Spanish breakfast or appetizer that's simple yet luxurious.
Ingredients
- 12 oz cherry tomatoes, halved
- 2 tbsp extra virgin olive oil
- 2 cloves garlic, sliced thin
- 4 sprigs fresh thyme
- 1/4 tsp sea salt
- pinch black pepper
- 4 slices crusty bread (for toasting), sliced 1/2-inch thick
- 3 oz sobrasada (Balearic cured sausage), sliced thin
- pinch fleur de sel (finishing salt)
- pinch red pepper flakes

Preheat oven to 250°F.

Arrange 12 oz halved cherry tomatoes on a small baking sheet, cut-side up. Drizzle with 2 tbsp extra virgin olive oil and scatter 2 cloves sliced thin garlic and 4 sprigs fresh thyme.

Season tomatoes with 1/4 tsp sea salt and pinch black pepper.

Roast tomatoes for 30-35 minutes until soft, caramelized, and shriveled in appearance.

While tomatoes roast, toast 4 slices sliced 1/2-inch thick crusty bread (for toasting) until crispy and golden (5-7 minutes).

On warm toast, arrange 3 oz sliced thin sobrasada (Balearic cured sausage), allowing it to soften from heat.

Top each slice with roasted tomatoes and some of the oil and juices from the pan.

Finish with a pinch of pinch fleur de sel (finishing salt) and a light sprinkle of pinch red pepper flakes. Serve immediately.
