Sheet Pan Greek Salmon
Baked salmon with fresh vegetables, feta, and Mediterranean herbs on one pan. Quick, healthy, and full of bright Greek flavors.
Ingredients
- 2.5 lbs salmon fillets
- 2 medium zucchini, sliced, sliced
- 1 bell pepper, diced, diced
- 1/2 red onion, sliced, sliced
- 2 cups cherry tomatoes, halved, halved
- 1/2 cup Kalamata olives, pitted, pitted
- 4 oz feta cheese, crumbled, crumbled
- 3 tbsp olive oil
- 3 tbsp fresh lemon juice
- 4 cloves garlic, minced, minced
- 2 tsp dried oregano
- to taste salt and black pepper
- 4-6 fresh lemon slices

Preheat oven to 400°F.

On a large sheet pan, arrange 2 medium sliced zucchini, sliced, 1 diced bell pepper, diced, 1/2 sliced red onion, sliced, 2 cups halved cherry tomatoes, halved, and 1/2 cup pitted Kalamata olives, pitted.

In a small bowl, whisk together 3 tbsp olive oil, 3 tbsp fresh lemon juice, 4 cloves minced garlic, minced, 2 tsp dried oregano, to taste salt and black pepper.

Pour half of the mixture over the vegetables and toss to coat. Spread vegetables in a single layer.

Place 2.5 lbs salmon fillets on top of vegetables. Drizzle with remaining oil mixture.

Season 2.5 lbs salmon fillets with to taste salt and black pepper. Top with 4-6 fresh lemon slices.

Bake for 15-18 minutes until 2.5 lbs salmon fillets flakes easily with a fork and reaches 145°F.

Sprinkle 4 oz crumbled feta cheese, crumbled over everything. Bake for 1-2 minutes more until 4 oz crumbled feta cheese, crumbled is warm.

Serve immediately from the sheet pan.
