  • 2 medium zucchini, sliced, sliced
  • 1 bell pepper, diced, diced
  • 1/2 red onion, sliced, sliced
  • 2 cups cherry tomatoes, halved, halved
  • 1/2 cup Kalamata olives, pitted, pitted
  • 4 oz feta cheese, crumbled, crumbled
  • 3 tbsp olive oil
  • 3 tbsp fresh lemon juice
  • 4 cloves garlic, minced, minced
  • 2 tsp dried oregano
  • to taste salt and black pepper
  • 4-6 fresh lemon slices

Instructions

    Preheat oven to 400°F.

    On a large sheet pan, arrange 2 medium sliced zucchini, sliced, 1 diced bell pepper, diced, 1/2 sliced red onion, sliced, 2 cups halved cherry tomatoes, halved, and 1/2 cup pitted Kalamata olives, pitted.

    In a small bowl, whisk together 3 tbsp olive oil, 3 tbsp fresh lemon juice, 4 cloves minced garlic, minced, 2 tsp dried oregano, to taste salt and black pepper.

    Pour half of the mixture over the vegetables and toss to coat. Spread vegetables in a single layer.

    Place 2.5 lbs salmon fillets on top of vegetables. Drizzle with remaining oil mixture.

    Season 2.5 lbs salmon fillets with to taste salt and black pepper. Top with 4-6 fresh lemon slices.

    Bake for 15-18 minutes until 2.5 lbs salmon fillets flakes easily with a fork and reaches 145°F.

    Sprinkle 4 oz crumbled feta cheese, crumbled over everything. Bake for 1-2 minutes more until 4 oz crumbled feta cheese, crumbled is warm.
