Ingredients

  • 4 vegetable samosas (homemade or store-bought)
  • 1 can canned chickpeas, drained
  • 1 cup plain yogurt, whisked
  • 1/4 cup tamarind chutney
  • 1/4 cup mint chutney
  • 1 tsp chaat masala
  • 1/2 tsp ground cumin
  • 1/2 red onion, finely diced
  • 1 tomato, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 green chili, finely chopped
  • 1/2 cup sev (crispy chickpea noodles)
  • 1/4 tsp red chili powder

Instructions

  1. 1

If the 4 vegetable samosas (homemade or store-bought) need to be heated, warm them in an oven at 350°F (175°C) for about 10 minutes or until heated through.

  2. 2

In a small saucepan, warm the 1 can drained canned chickpeas with 1/2 tsp ground cumin and a pinch of salt for about 5 minutes, then lightly mash some of them, leaving others whole.

  3. 3

Crush each vegetable samosas (homemade or store-bought) into bite-sized pieces and place in serving dishes.

  4. 4

Spoon the spiced canned chickpeas over the crushed vegetable samosas (homemade or store-bought).

  5. 5

Drizzle the 1 cup whisked plain yogurt over the chickpeas and samosas.

  6. 6

Add the 1/4 cup tamarind chutney and 1/4 cup mint chutney chutneys in a decorative pattern over the yogurt.

  7. 7

Sprinkle the 1 tsp chaat masala, 1/2 finely diced red onion, 1 diced tomato, 1/4 cup chopped fresh cilantro, and 1 finely chopped green chili over the dish.

  8. 8

Top with a generous amount of 1/2 cup sev (crispy chickpea noodles) for crunch.

  9. 9

Finish with a light dusting of 1/4 tsp red chili powder for spice and color.

  10. 10

Serve immediately while the samosas are still warm and the sev is crispy.
