Sarza de Sargazo
A vibrant coastal Peruvian salad featuring tender blanched sargassum seaweed tossed with crisp red onions, fresh lime juice, and spicy chili.
Ingredients
- 2 cups sargassum seaweed, chopped
- 1 red onion, sliced
- 1 tsp aji limo chili, minced
- 1/4 cup fresh lime juice
- 1/4 cup fresh cilantro, chopped
- 1 tbsp extra-virgin olive oil
- 1/2 tsp fine sea salt

Bring a pot of salted water to a boil over high heat.

Add 2 cups chopped sargassum seaweed and blanch for 2 minutes, then drain and plunge into ice water.

Soak 1 sliced red onion in cold water for 5 minutes, then drain thoroughly.

In a mixing bowl, combine the drained sargassum seaweed, red onion, 1 tsp minced aji limo chili, and 1/4 cup chopped fresh cilantro.

Whisk 1/4 cup fresh lime juice, 1 tbsp extra-virgin olive oil, and 1/2 tsp fine sea salt together in a small bowl.

Pour the dressing over the salad, toss gently to combine, and serve immediately.
