Seco de Cordero
A classic Peruvian stew featuring tender lamb braised in a flavorful cilantro, garlic, and dark beer sauce. Served with carrots and peas for a rich, hearty main course.
Ingredients
- 2 lbs lamb shoulder, cubed
- 2 tbsp vegetable oil
- 1 cup red onion, diced
- 4 garlic cloves, minced
- 2 tbsp aji amarillo paste
- 2 cups fresh cilantro, chopped
- 1 cup dark beer
- 1 cup beef broth
- 1 cup carrots, sliced
- 1 cup frozen peas, thawed
- 1 tsp ground cumin
- 1 tsp salt

Blend 2 cups chopped fresh cilantro with half of the 1 cup beef broth in a blender until smooth.

Heat 2 tbsp vegetable oil in a heavy pot over medium-high heat.

Season 2 lbs cubed lamb shoulder with 1 tsp salt and 1 tsp ground cumin, then brown in batches for 8 minutes and set aside.

Reduce heat to medium, add 1 cup diced red onion and 4 minced garlic cloves, and cook for 5 minutes until soft.

Stir in 2 tbsp aji amarillo paste and cook for 2 minutes.

Return lamb shoulder to the pot, then add 1 cup dark beer, the cilantro mixture, and remaining beef broth.

Cover and simmer on low heat for 60 minutes.

Add 1 cup sliced carrots and 1 cup thawed frozen peas, cover, and simmer for 20 minutes until lamb reaches an internal temperature of at least 160°F and is fork-tender.
