Seco de Res
A classic Peruvian beef stew braised in an aromatic cilantro, beer, and yellow pepper sauce with tender vegetables.
Ingredients
- 2 lbs beef chuck roast, cubed
- 2 tbsp vegetable oil
- 1 red onion, diced
- 4 garlic cloves, minced
- 2 tbsp aji amarillo paste
- 2 cups fresh cilantro, chopped
- 1 cup pale beer
- 1 cup beef broth
- 1 lb Yukon Gold potatoes, cubed
- 2 carrots, sliced
- 1 cup frozen green peas
- 1 tsp salt
- 1/2 tsp black pepper

In a blender, puree 2 cups chopped fresh cilantro with 1 cup pale beer until smooth, then set aside.

Season 2 lbs cubed beef chuck roast with 1 tsp salt and 1/2 tsp black pepper. Heat 2 tbsp vegetable oil in a heavy pot over medium-high heat and sear the beef until browned, then remove beef from the pot.

In the same pot, add 1 diced red onion and 4 minced garlic cloves, sauteing until softened. Stir in 2 tbsp aji amarillo paste and cook for 2 minutes.

Return beef to the pot, pour in the cilantro blend and 1 cup beef broth, bring to a boil, cover, and simmer over low heat for 60 minutes.

Add 1 lb cubed Yukon Gold potatoes and 2 sliced carrots to the pot, cover, and cook for 20 minutes until vegetables are fork-tender and beef internal temperature reaches at least 160°F.

Stir in 1 cup frozen green peas and simmer for 5 minutes until heated through before serving.
