  • 1 cup queso fresco, diced

    In a large bowl, combine cooled fresh fava beans, giant corn kernels, 1 cup diced queso fresco, 1/2 cup diced red onion, 2 diced Roma tomatoes, 1/2 cup finely diced red bell pepper, 1/2 cup sliced black botija olives, and 2 tbsp chopped fresh parsley.

    Whisk together 3 tbsp extra virgin olive oil, 2 tbsp red wine vinegar, 1/2 tsp salt, and 1/4 tsp black pepper in a small bowl.
