Sesame Noodle Salad
A chilled noodle salad tossed in a rich sesame dressing with fresh cucumber and scallions.
Ingredients
- 8 oz wheat noodles
- 1/4 cup Chinese sesame paste
- 3 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tbsp toasted sesame oil
- 1 tbsp maple syrup
- 2 garlic cloves, minced
- 1 tsp fresh ginger, grated
- 1 English cucumber, julienned
- 4 scallions, thinly sliced
- 1 tbsp sesame seeds, toasted

Cook 8 oz wheat noodles in a large pot of boiling water according to package directions, then drain and rinse under cold water.

Whisk together 1/4 cup Chinese sesame paste, 3 tbsp soy sauce, 2 tbsp rice vinegar, 1 tbsp toasted sesame oil, 1 tbsp maple syrup, 2 minced garlic cloves, and 1 tsp grated fresh ginger in a large bowl until smooth.

Add the cold noodles, 1 julienned English cucumber, and 4 thinly sliced scallions to the bowl and toss until evenly coated.

Garnish with 1 tbsp toasted sesame seeds and serve immediately or chilled.
