Shrimp Scampi Salad
Garlicky, lemon-butter shrimp served warm over crisp romaine lettuce for a light yet satisfying meal. Perfect for a quick lunch or dinner with vibrant classic flavors.
Ingredients
- 1 lb large raw shrimp, peeled
- 2 tbsp extra virgin olive oil
- 2 tbsp unsalted butter
- 4 garlic cloves, minced
- 1/4 tsp red pepper flakes
- 1/4 cup dry white wine
- 2 tbsp fresh lemon juice
- 6 cups romaine lettuce, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup grated Parmesan cheese

Divide 6 cups chopped romaine lettuce evenly among four serving bowls.

Heat 2 tbsp extra virgin olive oil and 2 tbsp unsalted butter in a large skillet over medium-high heat until the butter melts.

Add 4 minced garlic cloves and 1/4 tsp red pepper flakes, stirring for 1 minute until fragrant.

Add 1 lb peeled large raw shrimp to the skillet and cook for 2 minutes per side until pink, opaque, and reaching an internal temperature of 145 degrees F.

Pour in 1/4 cup dry white wine and 2 tbsp fresh lemon juice, simmering for 1 minute to create a warm dressing.
