Sopa a la Minuta
A comforting Peruvian beef soup featuring seasoned ground beef, thin noodles, evaporated milk, and gently poached eggs in a savory broth.
Ingredients
- 1 lb lean ground beef
- 2 tbsp vegetable oil
- 1 cup red onion, finely diced
- 4 garlic cloves, minced
- 2 tbsp tomato paste
- 2 tbsp aji panca paste
- 1 tsp dried oregano, crushed
- 6 cups beef broth
- 4 oz angel hair pasta, broken
- 1/2 cup evaporated milk
- 4 large eggs
- 1 tsp salt
- 1/2 tsp black pepper

Heat 2 tbsp vegetable oil in a large pot over medium heat.

Add 1 cup finely diced red onion and 4 minced garlic cloves, sautéing for 4 minutes until soft.

Stir in 2 tbsp tomato paste, 2 tbsp aji panca paste, 1 tsp crushed dried oregano, 1 tsp salt, and 1/2 tsp black pepper, cooking for 2 minutes.

Add 1 lb lean ground beef and cook for 5 minutes, breaking it apart until cooked through to an internal temperature of 160F.

Pour in 6 cups beef broth and bring the soup to a boil.

Add 4 oz broken angel hair pasta and cook for 3 minutes until tender.

Reduce heat to low, stir in 1/2 cup evaporated milk, then gently crack 4 large eggs into the simmering soup, cooking for 3 minutes until whites are set.
