Sopa de Trigo
A comforting Peruvian soup made with tender wheat berries, savory beef chuck, and classic yellow potatoes in a flavored broth.
Ingredients
- 2 tbsp vegetable oil
- 1 lb beef chuck, diced
- 1 medium yellow onion, diced
- 3 garlic cloves, minced
- 2 tbsp aji amarillo paste
- 1 cup wheat berries, soaked
- 6 cups beef broth
- 2 medium yellow potatoes, cubed
- 2 carrots, diced
- 1 tsp dried oregano
- 1 tsp salt

Heat 2 tbsp vegetable oil in a large pot over medium heat.

Add 1 lb diced beef chuck and sear until browned on all sides, about 6 minutes, then transfer to a plate.

In the same pot, add 1 medium diced yellow onion and 3 minced garlic cloves, sautéing for 4 minutes until translucent.

Stir in 2 tbsp aji amarillo paste and cook for 1 minute until fragrant.

Return beef to the pot, then add 1 cup soaked wheat berries and 6 cups beef broth.

Bring to a boil, reduce heat to low, cover, and simmer for 35 minutes.

Add 2 medium cubed yellow potatoes, 2 diced carrots, 1 tsp dried oregano, and 1 tsp salt.

Cover and simmer for 20 minutes until potatoes are soft and beef reaches an internal temperature of at least 145 F.
