Sopa Criolla
A comforting Peruvian soup made with seasoned ground beef, thin noodles, milk broth, and a fried egg.
Ingredients
- 2 tbsp vegetable oil
- 1 cup red onion, diced
- 2 tbsp garlic, minced
- 2 tbsp aji panca paste
- 2 tbsp tomato paste
- 1 lb ground beef
- 6 cups beef broth
- 4 oz angel hair pasta, broken
- 1/2 cup evaporated milk
- 1 tsp dried oregano, crushed
- 4 eggs

Heat 2 tbsp vegetable oil in a large pot over medium heat.

Add 1 cup diced red onion and 2 tbsp minced garlic, cooking for 5 minutes until soft.

Stir in 2 tbsp aji panca paste and 2 tbsp tomato paste, cooking for 2 minutes.

Add 1 lb ground beef and cook until browned and internal temperature reaches 160°F, about 6 minutes.

Pour in 6 cups beef broth and bring to a simmer.

Add 4 oz broken angel hair pasta and cook for 5 minutes until tender.

Stir in 1/2 cup evaporated milk and 1 tsp crushed dried oregano, then remove from heat.

Fry 4 eggs separately until whites are set and yolks remain runny, then serve on top.
