Chicken Fried Rice
Quick and satisfying stir-fried rice with tender chicken, vegetables, and egg in a savory soy glaze. A weeknight staple that comes together in minutes.
Ingredients
- 3 cups cooked rice, chilled
- 12 oz chicken breast, diced
- 2 eggs, beaten
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 2 tbsp vegetable oil
- 2 cloves garlic, minced
- 1 tsp fresh ginger, minced
- 1/2 cup carrots, diced
- 1/2 cup frozen peas
- 2 green onions, sliced
- 1/2 tsp salt
- 1/4 tsp white pepper

Heat 2 tbsp vegetable oil in a wok or large skillet over high heat. Add 12 oz diced chicken breast and cook until no longer pink, about 4-5 minutes. Transfer to a plate.

Add a bit more oil if needed. Add 2 cloves minced garlic and 1 tsp minced fresh ginger, cook for 30 seconds until fragrant.

Add 1/2 cup diced carrots and 1/2 cup frozen peas, stir-fry for 2-3 minutes until vegetables are tender-crisp.

Push everything to the side of the wok. Add 2 beaten eggs to the empty side and scramble until cooked through, then break into small pieces and mix with vegetables.

Add 3 cups cooked rice, chilled and break up any clumps. Stir-fry for 2-3 minutes until rice is heated through.

Return chicken to the wok. Drizzle with 2 tbsp soy sauce and 1 tsp sesame oil. Toss until everything is well coated.

Season with 1/2 tsp salt and 1/4 tsp white pepper to taste. Top with 2 sliced green onions and serve hot.
