Tartine with Caramelized Onions and Goat Cheese
A trendy French open-faced tartine with sweet caramelized onions, creamy goat cheese, and fresh herbs on toasted bread. Simple elegance in every bite.
Ingredients
- 2 lbs yellow onions, thinly sliced
- 2 tbsp unsalted butter
- 1 tbsp olive oil
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1 tbsp white wine vinegar
- 8 slices crusty bread (baguette or ciabatta), sliced
- 4 oz goat cheese (chèvre)
- 4 sprigs fresh thyme
- 1 tsp honey
- 2 pinches fleur de sel (sea salt)

Heat 2 tbsp unsalted butter and 1 tbsp olive oil in a large skillet over medium heat.

Add 2 lbs thinly sliced yellow onions and stir well. Season with 1/2 tsp kosher salt and 1/4 tsp black pepper.

Cook uncovered, stirring occasionally, for 35-45 minutes until the yellow onions are deep golden brown and very soft.

In the last few minutes of cooking, add 1 tbsp white wine vinegar and a pinch of 1 tsp honey. Stir well.

Meanwhile, toast the 8 slices sliced crusty bread (baguette or ciabatta) lightly until golden on both sides.

Spread 4 oz goat cheese (chèvre) on each toast. Top generously with the caramelized yellow onions.

Sprinkle with fresh 4 sprigs fresh thyme leaves and 2 pinches fleur de sel (sea salt). Serve immediately.
