Vegan Split Pea Soup
A velvety, smoky split pea soup brightened with fresh lemon and thyme, made quickly from dry peas without soaking.
Ingredients
- 2 tbsp olive oil
- 1 cup yellow onion, diced
- 1 cup carrots, diced
- 1 cup celery stalks, diced
- 4 garlic cloves, minced
- 1 tsp smoked paprika
- 1 tsp dried thyme
- 2 cups dry green split peas, rinsed
- 5 cups low-sodium vegetable broth
- 2 bay leaves
- 1 tsp kosher salt
- 1/2 tsp ground black pepper
- 2 tbsp fresh lemon juice

Select the sauté setting on the pressure cooker and heat 2 tbsp olive oil.

Add 1 cup diced yellow onion, 1 cup diced carrots, and 1 cup diced celery stalks, cooking for 3 minutes until softened.

Stir in 4 minced garlic cloves, 1 tsp smoked paprika, and 1 tsp dried thyme, cooking for 30 seconds until fragrant.

Add 2 cups rinsed dry green split peas, 5 cups low-sodium vegetable broth, 2 bay leaves, 1 tsp kosher salt, and 1/2 tsp ground black pepper, stirring to scrape up any browned bits from the bottom.

Secure the lid, seal the valve, and pressure cook on high for 15 minutes.

Allow pressure to release naturally for 10 minutes, then carefully vent any remaining steam and remove the lid.

Discard 2 bay leaves, stir vigorously with a whisk to break down the peas into a creamy texture, and finish by stirring in 2 tbsp fresh lemon juice before serving.
