Ajo Blanco
A traditional chilled white soup made from blended almonds, stale bread, garlic, and extra virgin olive oil. Crisp green grapes add a sweet contrast to the velvety, savory broth.
Ingredients
- 1 cup raw blanched almonds
- 3 oz crustless stale white bread, torn
- 2 garlic cloves, peeled
- 2 cups ice-cold water
- 1/2 cup extra virgin olive oil
- 2 tbsp sherry vinegar
- 1 tsp fine sea salt
- 1/2 cup seedless green grapes, halved

Soak 3 oz torn crustless stale white bread in a bowl with a splash of ice-cold water for 5 minutes.

Add 1 cup raw blanched almonds, 2 peeled garlic cloves, and 1 tsp fine sea salt to a blender with the soaked crustless stale white bread.

Pour in remaining 2 cups ice-cold water and blend on high until completely smooth.

Slowly stream in 1/2 cup extra virgin olive oil and 2 tbsp sherry vinegar while blending until emulsified.

Chill in the refrigerator for at least 2 hours and serve garnished with 1/2 cup halved seedless green grapes.
