Asparagus Soup
A silky spring soup made with tender asparagus simmered in broth and finished with heavy cream and fresh lemon juice.
Ingredients
- 2 tbsp unsalted butter
- 1/2 cup shallots, chopped
- 2 garlic cloves, minced
- 2 lbs fresh asparagus, trimmed
- 4 cups vegetable broth
- 1/2 cup heavy cream
- 1 tbsp fresh lemon juice
- 1 tsp salt
- 1/2 tsp black pepper

Melt 2 tbsp unsalted butter in a large pot over medium heat.

Add 1/2 cup chopped shallots and 2 minced garlic cloves, stirring until soft and fragrant, about 3 minutes.

Chop 2 lbs trimmed fresh asparagus into 1-inch pieces.

Add fresh asparagus, 4 cups vegetable broth, 1 tsp salt, and 1/2 tsp black pepper to the pot.

Bring to a boil, then reduce heat and simmer until tender, about 10 minutes.

Purée the soup in a blender until smooth, then return it to the pot.

Stir in 1/2 cup heavy cream and 1 tbsp fresh lemon juice, heating gently for 2 minutes before serving.
