Avocado Coconut Smoothie
A luscious Vietnamese-style blended drink that combines ripe avocado with sweetened condensed milk and coconut milk for an ultra-creamy, naturally thick smoothie. Rich and satisfying, it is as much a dessert drink as a refresher.
Ingredients
- 2 ripe avocado, pitted, peeled
- 1 cup full-fat coconut milk
- 1/4 cup sweetened condensed milk
- 1 cup ice cubes
- 2 tsp fresh lime juice
- pinch fine salt

Add 2 pitted, peeled ripe avocado, 1 cup full-fat coconut milk, 1/4 cup sweetened condensed milk, 1 cup ice cubes, 2 tsp fresh lime juice, and fine salt to a blender.

Blend on high speed until completely smooth and creamy, about 60 seconds. Scrape down the sides if needed and blend again.

Taste and adjust: add more condensed milk for sweetness or more lime juice for brightness.
