- 1/4 cup tapioca starch
- 2.5 cups water
- 2 tbsp vegetable oil
- 1 shallot, minced
- 1/2 lb ground pork
- 1/4 cup dried wood ear mushrooms, minced
- 2 tbsp fish sauce

Whisk 1 cup rice flour, 1/4 cup tapioca starch, and 2.5 cups water together in a bowl, then stir in 1 tsp of vegetable oil and rest for 30 minutes.

Heat 2 tbsp vegetable oil in a skillet over medium heat, then saute 1 minced shallot until translucent.

Add 1/2 lb ground pork and 1/4 cup minced dried wood ear mushrooms, cooking until the pork reaches an internal temperature of 160°F, then stir in 2 tbsp fish sauce.

Pour a thin layer of batter into a warm, lightly oiled non-stick pan, cover, and steam for 45 seconds until translucent.
