Vit Lon
Warm fertilized duck eggs cooked gently and served with Vietnamese coriander, cracked pepper, salt, and citrus.
Ingredients
- 4 fertilized duck eggs
- 1 cup Vietnamese coriander leaves, washed
- 1 tsp fine sea salt
- 1 tsp coarsely ground black pepper
- 2 fresh kumquats, halved
- 1 fresh bird eye chili, sliced

Place 4 fertilized duck eggs into a saucepan and cover with cool water by at least one inch.

Bring the water to a boil over high heat on the stovetop.

Reduce heat to medium-low and simmer gently for 25 minutes until internal temperature reaches 165°F.

Combine 1 tsp fine sea salt, 1 tsp coarsely ground black pepper, 2 halved fresh kumquats, and 1 sliced fresh bird eye chili in a small dipping dish.

Serve hot 4 fertilized duck eggs in small cups alongside fresh 1 cup washed Vietnamese coriander leaves and dipping salt.
