Baked Clams Casino
Fresh littleneck clams are stuffed with a savory bacon, garlic, bell pepper, and breadcrumb mixture, then baked until golden and bubbling.
Ingredients
- 24 littleneck clams, scrubbed
- 4 slices bacon, diced
- 2 tbsp dry white wine
- 1/4 cup red bell pepper, finely diced
- 2 tbsp shallot, minced
- 2 garlic cloves, minced
- 1/2 cup panko breadcrumbs
- 2 tbsp unsalted butter, melted
- 2 tbsp flat-leaf parsley, chopped
- 2 tsp fresh lemon juice

Preheat oven to 425F. Line a rimmed baking sheet with coarse salt or foil to stabilize clams.

Steam 24 scrubbed littleneck clams with 2 tbsp dry white wine in a covered pot over medium-high heat for 5 minutes until shells open, then remove clams, discard unopened ones, and break off top shells.

Cook 4 slices diced bacon in a skillet over medium heat for 6 to 8 minutes until crisp and reaching an internal temperature of 160F, then transfer to paper towels while reserving fat in skillet.

Sauté 1/4 cup finely diced red bell pepper, 2 tbsp minced shallot, and 2 minced garlic cloves in reserved bacon fat over medium heat for 3 minutes until softened.

Off heat, stir in 1/2 cup panko breadcrumbs, 2 tbsp melted unsalted butter, 2 tbsp chopped flat-leaf parsley, 2 tsp fresh lemon juice, and cooked bacon.

Spoon breadcrumb topping evenly over each clam on half shell on prepared baking sheet.
